What’s chewy, chocolate-studded, and topped with pink buttercream?

This gluten-free cookie cake is my new go-to for birthdays, barbecues, and Tuesdays that need sprinkles. It’s everything you love about a classic chocolate chip cookie, baked into one big, shareable dessert. No chilling. No complicated steps. Just one pan.

I adapted this recipe from my classic gluten-free chocolate chip cookies, but scaled it down so it bakes evenly in a 9-inch springform pan. (I tried the full batch first and… it was a little much. Too thick and very underbaked center. Oops.)

I even overbaked it — twice — so you don’t have to. My best tips are all in the post.

Frost it pink, add sprinkles, and serve it up with a scoop of vanilla ice cream. It’s gluten-free and party-ready!
