Beat the Heat with These Gluten-Free Favorites ☀️


Happy Sunday! I’m popping in with some gluten-free recipe inspiration to kick off your week. It's sooo hot here in Chicago this weekend, so I'm leaning into recipes that don’t use the oven or need a lot of time on the stovetop.

Here's what I'm making this weekend:

  • Gluten-Free Avocado Chicken Salad – I made this salad earlier this week and can’t stop eating it. It’s packed with juicy chicken, creamy avocado, corn, bacon, and a lemony cilantro dressing. So fresh and satisfying! To make this truly no-cook/bake, I use gluten-free rotisserie chicken in this recipe all the time.
  • Gluten-Free Crab Cakes – Pan-fried in a skillet until golden and crispy. These are easy to prep ahead and make a great light dinner or appetizer. Serve with a squeeze of lemon or a simple aioli.
  • Basil Lemonade – Bright and herby, this lemonade is on repeat around here. It’s perfect for hot days, and makes a great base for summer cocktails, too. Bonus: it's a great way to use up my surplus of basil from the garden!
