Last Minute Gluten-Free Mother's Day Recipes (ready in 30 minutes or less)

If you need a last minute recipe to bring to today's celebrations and you're short on time, these gluten-free recipes are ready in under 30 minutes!

  • Burrata Caprese - If you're anything like me and are constantly buying the biggest container of burrata at Costco with no plans for what to do with it, try this burrata caprese salad. It's ready in about 5-10 minutes.
  • Green Onion Dip - You may already have most of the ingredients for this one in your refrigerator! It takes just about 5 minutes and it's the perfect dip for Spring veggies, potato chips or tortilla chips.
  • Cucumber Lemonade - This recipe is so easy and while it's not quite ready in 30 minutes because it needs to chill in the refrigerator, the prep time is under 20 minutes! Just prep and let it hang out until you're ready to serve!
  • Stuffed Mini Peppers - Bacon and melty cheese... do I need to say more? It's the perfect party appetizer and ready in about 25 minutes!
  • Gluten-Free Bruschetta with Mozzarella - This is one I'll be making today for our get-together. I might swap the mozzarella with burrata (see note about Costco above), but it's always a favorite on our appetizer table! I use Schar gluten-free baguettes for this, which are widely available at many grocery stores in the US.
