Everything You Need for a Gluten-Free St. Patrick's Day

St. Patrick's Day is this Tuesday, and if you haven't figured out what you're making yet, I've got you covered. These are my favorite gluten-free recipes for the holiday, from the main event all the way through to what you're making with the leftovers on Wednesday morning.

Slow Cooker Corned Beef

Throw your corned beef in the crock pot with potatoes, carrots, onions, and cabbage and let the slow cooker do the work. The whole thing is gluten-free and dairy-free. Just make sure you check the label on your corned beef, because gluten can hide in the brine or spice packet.

Gluten-Free Irish Soda Bread

You need something to serve alongside that corned beef, and this is it. It tastes just like the traditional version and comes together easily. Serve it warm with a pat of Irish butter.

Irish Nachos

Crispy roasted potato rounds loaded with sharp Irish cheddar, crumbled bacon, and green onions. These work as an appetizer or a snack while dinner is in the slow cooker. If you have leftover corned beef from last year's stash in the freezer, swap it in for the bacon.

Gluten-Free Shepherd's Pie

If corned beef isn't your thing (no judgment), shepherd's pie is another cozy, hearty option that feels right for the holiday.

Leftover Corned Beef Hash

The day after St. Patrick's Day calls for corned beef hash. Crispy potatoes, leftover corned beef, and a runny fried egg on top. It's ready in 30 minutes and so much better than the canned stuff.

If you're picking up your corned beef this weekend, you're right on time. Most grocery stores have a great selection right now.

A quick note on corned beef and gluten: Not all corned beef is gluten-free. Gluten can hide in the brine or the spice packet that comes with the brisket, so always check the label before you buy. The good news is that most brands I've seen at the grocery store are clearly labeled gluten-free, so you should have plenty of options.
