I took my gluten-free chicken pot pie filling and my gluten-free cheddar drop biscuits (with a Cheddar Bay makeover), combined them into one cast iron skillet, and it might be my new favorite thing I've ever made.

This is a cobbler-style pot pie with a thick, creamy chicken filling topped with fluffy Cheddar Bay drop biscuits and finished with a melted garlic butter brush straight out of the oven. Completely gluten-free and so comforting.

Gluten-free Cheddar Bay chicken pot pie made in one cast iron skillet and it might be my new favorite thing I've ever made. I took my gluten-free chicken pot pie filling and my gluten-free cheddar drop biscuits and combined them into a cobbler-style pot pie, and it has been on repeat in my kitchen ever since. The filling is thick and creamy with chicken, carrots, celery, onions, and peas, and the biscuits are fluffy, cheesy, and loaded with Old Bay for that real Cheddar Bay flavor. The whole thing comes together in one skillet and is completely gluten-free using Bob's Red Mill 1-to-1 gluten-free flour. If you've been missing Cheddar Bay biscuits since going gluten-free, you’re definitely going to want to make this one.
