I'm going to be honest with you. My brain is absolute mush right now. February has that effect. The holidays are a distant memory, spring feels far away, and every night around 5pm I stare into the fridge like it owes me an explanation.

If you're in the same late-winter fog, I've got you. Here are five of my easiest, most comforting gluten-free dinners. These are the ones I reach for when I have zero brainpower left but still want to eat well without thinking too hard.

Bacon Mushroom Risotto

I know risotto sounds fancy, but it's really just stirring. It comes out so creamy and rich, and the bacon and mushrooms do all the heavy lifting flavor-wise.

Gluten-Free Shepherd's Pie

Meat, veggies, and mashed potatoes all in one dish. It's peak comfort food and it makes amazing leftovers, which is honestly half the reason I make it.

Italian Sausage White Bean Stew

Walking Taco Casserole

Seasoned ground beef, black beans, melted cheese, and a crunchy layer of Fritos. One pan, about 40 minutes, and everyone in my house goes back for seconds. This one is a weeknight lifesaver.

Spicy Gluten-Free Meatballs

We make these all the time. They're great over GF pasta with marinara, but we also love them on gluten-free meatball subs. They've got just enough kick to make things interesting and they come together really fast.
