I’ve been making these gluten-free cottage cheese breakfast biscuits for almost a year now, and I figured it was finally time to share the recipe with you. They’ve become a staple in our house because they’re endlessly adaptable — we change up the mix-ins depending on what’s in the fridge. My personal favorite right now is the sausage version, which is what we’re having this week. These biscuits freeze beautifully, making them perfect for busy mornings. I usually thaw them in the fridge overnight, then warm them in the air fryer for a few minutes. If we’re in a rush, I’ll defrost one straight from the freezer — a minute in the microwave and a quick crisp in the air fryer does the trick. Even my toddler loves them, and my gluten-eating sister even took a few home from my freezer last week after babysitting — always a good sign when the gluten-eaters are asking for them, too!
